Game Day Provisions 101: Chipotle Chili Buffalo Wings

Traditional buffalo wings with added heat & spices liven up tailgating parties in no time. Football fanatics will go wild when you serve this recipe for success to clench a signature win.

makes 2 main dish or 4 appetizer servings

2 Tbsp chili powder
1 1/2 tsp kosher salt
1 tsp cumin
1/2 tsp chipotle chili powder
2 1/2 lbs chicken wing pieces
1 cup ap flour
Vegetable oil
Chipotle Buffalo Sauce
Garlic-Lime Ranch
Celery sticks

Stir together the first 4 ingredients & rub onto the chicken wing pieces.
Dredge in the flour, shaking to remove excess.

Pour the oil to a depth of 2 inches into a Dutch oven & heat to 360 degrees.

Fry the chicken wings, in batches, 7 to 8 minutes or until done.
Drain on a wire rack over paper towels.

Toss the wings in Chipotle Buffalo Sauce.
Serve with Garlic-Lime Ranch & celery sticks.

makes enough to coat 2 1/2 lbs chicken wings

1 {6-oz} bottle hot sauce
1/2 cup melted butter
1 1/2 tsp chipotle chili powder

Stir together the ingredients in a large bowl.

1 {1-oz} packet Ranch-style dressing mix
1 cup light mayonnaise
3/4 cup whole buttermilk
1 garlic clove, pressed
Zest & juice from 1 lime
Freshly ground black pepper

Whisk together the ingredients in a medium bowl.
Chill 1 hour.

The 411

The Chicken

Use the weight as your guide.

  The recipe works well with just drumettes generally packaged & ready for dredging .
However, feel free to pick up regular wings that can be prepped.
Simply cut at the joint for a drumette & a flat.
Discard the wing tip.

The Dredge

Many buffalo wing recipes call to fry the chicken naked.
A little bit of flour helps the sauce cling to the wings.

The wings are also tasty without sauce.
The seasoning permeates the skin & the meat 

The Chipotle Buffalo Sauce

i used a good bit of chipotle powder
reduce the amount or add more if you’d like to
simply taste as you create

The Sauce

I used butter in the chipotle sauce & pulled some of the fat from the Ranch.
These aren’t lightened wings but simply more balanced.
