Cashew-Basil Chicken Salad is a beautiful southern favorite & when accompanied with salty nuts, fresh berries & a delicious cheese, you simply can’t go wrong. Be certain to make this delightful recipe for bridal showers or birthday occasions for a welcome reception of compliments.

Cashew-Basil Chicken Salad
makes 6 to 8 servings

2 lbs chicken tenderloins
3/4 cup mayonnaise
1 Tbsp Sriracha
The zest & the juice from 1 lime
4 scallions, sliced
3 Tbsp chopped basil leaves
Kosher salt & freshly ground pepper
1 {8-oz} package spinach leaves
Roasted cashews & fresh strawberries

Bring the chicken to a boil over Medium-High heat. Cook 10 minutes or until it’s no longer pink. Drain & cool 10 minutes. Pulse the chicken in the food processor several times until coarsely shredded. Stir together the mayonnaise, the Sriracha & the zest & the juice from the lime in a large bowl. Fold in the chicken, the scallions & the basil just until combined. Season with salt & pepper to taste. Chill until ready to serve. Portion the spinach on plates, top with the chicken salad & sprinkle with cashews. Serve with strawberries.

How To Zest Fresh Citrus

A little lime zest is a wonderful way to add fresh notes to main dishes.
Pep up a variety of your favorite foods with this easy technique.

The 411

Hold the microplane grater over a cutting board, allowing the tip to rest over the surface at an angle. Swipe just the outer portion of the citrus over the tool towards the board. Turn the fruit after each swipe. You only want to collect zest with color & not the white, bitter pith just underneath the surface. Repeat the process until you have collected the amount you’d like to add to the recipe.
