Southern Fried Tailgating

Crisp, golden appetizers just can’t be beat on game day & the good news is that frying is one of the easiest methods to prepare these delightful morsels. Buffalo Chicken Wontons are a crowd-pleasing snack filled with the flavors football fanatic crave so you’ll definitely want to be certain they make the roster of goodies. Follow my tips as outlined in The Tailgaters Essential Frying Guide for pointers on how to pull it off & score big. So let the games begin… it’s bound to be edge of your seat, cup throwing good.

Buffalo Chicken Wontons Rebecca Gordon Buttermilk Lipstick

RKG MonogramBuffalo Chicken Wontons
makes about 2 dozen

1 1/2 cups shredded & chopped deli-roasted chicken
1/2 {8-oz} package cream cheese, softened
1/4 cup hot sauce
1/2 cup blue cheese crumbles
1 scallion, sliced
26 wonton wrappers
Vegetable oil
High End Ranch Dipping Sauce
Celery & carrots
Combine the chicken & next 4 ingredients in a medium bowl. Place the wonton wrappers, about 6 at a time, on a cutting board.
Portion 2 tsp filling in the center of each wrapper. Do not over fill. Moisten the edges with water & fold in half. Press the edges well to seal. Place the wontons on a parchment paper-lined half sheet pan. Cover with plastic wrap. Repeat with the remaining filling & wrappers. Refrigerate up to a day ahead before frying.

Pour the oil to a depth of 1-inch in a Dutch oven & heat to 365 degrees. Fry the wontons, in batches, about 2 minutes per side
or until golden brown. Remove them from the grease. Place on a wire rack over paper towels. Keep warm in a 200 degree oven up to 1 hour. Serve with the High End Ranch Dipping Sauce, celery & carrots.

makes 2 cups

1 {1-oz} package Ranch-style salad dressing mix
1 cup mayonnaise
3/4 cup whole buttermilk
A handful of chopped parsley
1 green onion, sliced
1 Tbsp fresh lemon juice
Freshly ground black pepper

Whisk together all of the ingredients in a medium bowl. Chill 30 minutes before serving. Make up to 3 days ahead.
