Makes 10 servings
Prep: 15 minutes Bake: 30 minutes

Run The Option

Pick up a rotisserie chicken from the market for a super-quick option. Expect one chicken to yield about 3 cups of meat.

1 {8-oz} package cream cheese, softened
3/4 cup Greek yogurt
3/4 cup shredded Cheddar cheese, divided
1/2 cup blue cheese crumbles
3 scallions, sliced
1/4 cup chopped fresh parsley
3 cups shredded, cooked chicken
1/2 cup hot sauce
Corn chips
Assorted vegetables
Garnishes: Blue cheese crumbles, chopped parsley, sliced green onions
Freshly ground pepper

Preheat oven to 350 degrees. Stir together cream cheese, yogurt, 1/2 cup Cheddar cheese, blue cheese, green onions and parsley in a large bowl. Toss together chicken and hot sauce in a small bowl. Fold chicken into cheese mixture. Spoon chicken mixture into a lightly greased 1-quart casserole dish. Top with remaining 1/4 cup Cheddar cheese. Place dish on a sheet pan. Bake 25 to 30 minutes or until thoroughly heated. Serve with corn chips and assorted vegetables. Garnish, if desired.

Football fanatics wouldn’t be able to indulge in game day goodness quite the same
without a collection of dedicated dairy farmers from across the Southeast.

The non-profit Southeast United Dairy Industry Association, Inc. (SUDIA) is funded by dairy farm families of the Southeast and works with schools, health professionals, retailers, dairy processors and the public to promote dairy foods throughout Alabama, Georgia, Kentucky, Louisiana, Mississippi, North Carolina, South Carolina, Tennessee and Virginia.

Dairy foods contain nine essential nutrients that are instrumental in building strong bones and healthy bodies.
To that end, SUDIA works with schools, health professionals, farmers, processors, media and milk-lovers of all ages to provide them with nutritional information, research and recipes for a healthy lifestyle that includes three servings of milk, cheese or yogurt every day.

America’s dairy industry is much more than milk. It’s economic activity, jobs and supporting local businesses. The United States is home to a mixture of large and small dairy farms — both of which contribute to the local economy and tax base.
