A breakfast fit for linebackers in your with these hearty bites. Prepare the muffins ahead of time & warm in the oven just before guests arrive. They can also be wrapped in foil & placed on the unlit side of the grill to reheat. Get ready for a touchdown of rave reviews from football fanatics when you serve these delicious MVP’s.

RKG MonogramSausage & Cheddar Game Day Muffins
makes 2 dozen

1 lb hot pork breakfast sausage
2 eggs
2 Tbsp coarse grain mustard
1 {12-oz} bottle beer
3 1/2 cups biscuit mix
1 {8-oz} package finely shredded Cheddar cheese
2 scallions, minced

Preheat the oven to 400 degrees.
Brown & crumble sausage in a small non-stick skillet over Medium-High heat
until no longer pink, about 8 to 10 minutes.
Drain well & pat the sausage for excess grease with paper towels.

Whisk together the eggs, the mustard & the beer in a medium bowl.
Toss together the biscuit mix, the Cheddar, the scallions & the cooled sausage
in a very large bowl coating all the ingredients well.

Fold the egg mixture into the cheese mixture with a rubber spatula.
Scrape the sides of the bowl & lift the mixture from the bottom to combine well.
Do not over mix.
Portion the batter using an ice cream disher into 2 lightly greased {12-cup} muffin tins.

Bake for 14 to 16 minutes or until the centers are set.
Cool a few minutes. Loosen the muffins from the tins using a small palate knife.
Serve warm.
