If you can’t show a little sweetness, well then, what’s the point? Draw up a smart play for healthy courtside snacks. A bright & cheery southern superstar offers sweet, smooth texture to the standard white bean dip for a fast break beyond boring. Prepare a few {8-oz} sweet potatoes by piercing several times with a fork. Bake on a foil-lined sheet pan at 400 degrees for 1 hour & 20 minutes. Allow them to cool completely before blending the dip. With plenty of hoops action still to go, you simply can’t go wrong with a bowl of Sweet Potato-White Bean Dip. Serve with a platter of fresh vegetables, crackers & pita chips for simple, guilt free entertaining at home.

makes 1 1/2 cups


I keep baked sweet potatoes in the refrigerator to use for a variety of easy meal applications that are fast & interesting. Bake several for a variety of options beyond the dip. Try them diced over salads or warm them briefly & top with your favorite pulled pork barbecue or chicken for a tasty meal.

1 {15.5-oz} can cannellini beans, rinsed & drained
1/2 cup mashed, cooked sweet potato
1/4 cup loosely packed fresh parsley leaves
1 garlic clove, cut into small pieces
3 Tbsp fresh lemon juice
1 Tbsp olive oil
1/2 tsp kosher salt
1/4 tsp crushed red pepper flakes
Crackers & pita chips

Pulse the first 8 ingredients in a food processor until smooth.
Serve with crackers & pita chips.

And One…

Dollop the dip over a salad for an alternative to high fat salad dressings. It also makes a tasty addition to a variety of sandwiches.
