Fast Break

Save time & cook several quesadillas at once on a hot griddle.

5 {7 1/2-inch} flour tortillas
10 Tbsp Sun Dried Tomato-Pecan Pesto
5 Provolone cheese slices, cut in half
10 Tbsp chopped, cooked chicken
1 1/4 cup shredded Mozzarella cheese
2 Tbsp melted butter

Spread each of the flour tortillas with 2 Tbsp Sun Dried Tomato-Pecan Pesto.
Top one side of the tortillas with 2 pieces Provolone, 2 Tbsp chicken & 1/4 cup Mozzarella.
Fold the tortillas in half, to contain the ingredients. Brush one side with melted butter.

Place a few filled tortillas, buttered side down, in a hot, large non-stick skillet.
Cook over Medium heat until golden brown, about 2 minutes.
Brush the remaining sides of the flour tortillas with melted butter before flipping.
Cook an additional 2 minutes. Repeat with the remaining quesadillas. Slice into wedges.
