By the time my junior year in high school rolled around, sorority basketball had been banned. Girls rushed at the end of their freshman year in the summertime & it was great fun. The four social clubs hosted adorable, highly themed costume parties that were generally held poolside. A car full of the older girls from each club would stop by your house to invite you & leave a big, glitzy invitation, generally made from poster board. One was a cruise ship with a working draw bridge that revealed the party logistics, including attire. In this case, a tacky tourist. Another was Sesame Street & then there was The Muppet Show. Our neighbor was this crazy-good artist homemaker. She was beautiful & had golden locks that cascaded all the way past her tailgate but you rarely caught her with her hair down. She liked to twist it into a Cinnabon. She would bounce & sing behind the wheel of her rabbit convertible in carpool to Willie Nelson for whom she had a slight crush. I just loved being near her. She created two masks & homemade costumes for me. For Oscar the Grouch, I stepped into a bottomless tin garbage can with straps that rest over my shoulders & wore the lid as a hat. As Miss Piggy, I slipped into a tutu over a pale pink leotard & tights. A straw hat & a ring of artificial flowers that had been secured with a hot glue gun topped the ensemble. Mrs. K attached elaborate masks she had painted that looked exactly like the characters to wooden paint stirring sticks so I could carry them easily. After pledging & spending the rest of the summer getting to know the older girls, it was back to school. As a newly pledged sophomore, intramural sorority basketball came into play. The games were held on Saturday mornings & everyone was there to either cheer on their club or play on the court. And the boys? You bet. They were there too. After the games were over, we’d all head out for pizza. As the season progressed, so did the competitive spirit to win. Before long, we had racked up 4 jammed fingers, 3 broken noses, 2 sprained ankles & a fractured arm– all honest to goodness accidents. The girls really did respect one another from sorority to sorority. After an emergency Panhellenic meeting, a decision was made to switch to a non-contact sport the following year. Volleyball.

Pepperoni Pizza Quesadillas
makes 6 servings

Fast Break

Save time & cook several quesadillas at once on a hot griddle.

1 {8-oz} package shredded mozzarella cheese
1/2 cup finely grated Romano cheese
2 garlic cloves, pressed
1/2 tsp crushed red pepper flakes
5 {7 1/2-inch} flour tortillas
35 pepperoni slices
2 Tbsp melted butter
3/4 cup marinara sauce
1 Tbsp chopped fresh basil

Toss together the cheeses, the garlic & the crushed red pepper in a medium bowl.
Top one side of the flour tortillas with 1/4 cup of the cheese mixture.
Layer each with 7 pepperoni slices. Top each with 1/4 cup of the remaining cheese mixture.
Fold the tortillas in half, to contain the ingredients. Brush one side with melted butter.

Place the a few filled tortillas, buttered side down, in a hot, large non-stick skillet.
Cook over Medium heat until golden brown, about 2 minutes.
Brush the remaining sides of the flour tortillas with melted butter before flipping.
Cook an additional 2 minutes. Repeat with the remaining quesadillas. Slice into wedges.
Stir together the marinara sauce & the basil. Serve with the quesadillas.

Mix up the cheese selections for a change of pace by substituting provolone for the mozzarella. Asiago & Parmesan make ideal subs for the Romano.
