Fresh seasonal ingredients should be highlighted from appetizers to desserts when summer entertaining is in order. A recipe of Buttermilk Pâte Sucrée may be rolled into smaller discs & filled with a Simple Plum Jam then topped with cheese & nuts. Walnut-Jarlsberg Plum Galettes may be prepared up to a day in advance & either chilled or frozen before baking for a party starter that is wonderful when served with wine & mixed cocktails. makes 16 appetizers

Buttermilk Pâte Sucrée
1 cup shredded Jarlsberg cheese
2 recipes Simple Plum Jam
1/3 cup chopped walnuts

Prepare the Buttermilk Pâte Sucrée as directed. Divide the dough into 8 equal portions. Roll each piece of dough on a lightly floured surface into a 5-inch circle to an 1/8-inch thickness. Sprinkle 2 teaspoons cheese in the center of the prepared pastry dough leaving a 1-inch border, dollop with 1 teaspoon Simple Plum Jam, then top with 1 additional teaspoon of cheese. Sprinkle 1 teaspoon of walnuts over the fruit & cheese mixture. Fold the excess dough over the fruit mixture forming a rustic, freeform tart. Transfer to a parchment paper-lined half sheet pan spacing 1-inch apart. Repeat with the remaining 15 portions of dough. Freeze 20 minutes or chill 1 hour.

Preheat the oven to 425 degrees. Bake the galettes on the center rack 18 to 20 minutes or until the filling is bubbly & the crust is golden. Remove from the oven. Serve warm or at room temperature with cocktails.

makes 16 miniature galettes

2 cups all purpose flour
1/2 cup sugar
1 tsp kosher salt
3/4 cup cold butter, cut into pieces
4 Tbsp ice cold whole buttermilk
1 egg yolk

Whisk together the flour, the sugar & the salt in a large bowl. Cut the butter into the mixture using a pastry blender or your fingers until crumbly in texture making certain to leave some of the fat in large bits. Drizzle the buttermilk & the egg yolk over the mixture. Fold it together with a rubber spatula then shape it into a compact mixture between your hands. Remove the dough from the bowl, form into a disc & cover in plastic wrap. Chill 20 minutes. Use as directed.

This small batch sweet-tart jam is just the right amount to serve over English muffins or toast for several breakfast meals or it may be used as a pastry filling.

3 fresh plums {about 11-ounces}, pitted & quartered 
1/4 cup sugar
1 Tbsp fresh lemon juice

Bring all of the ingredients to a boil in a 3-quart saucepan over Medium-High heat. Reduce the heat to Medium & cook 6 to 7 minutes or until reduced & thickened. The mixture should bubble vigorously all over the surface & they will not subside while stirring the mixture. It will just cover the bottom of the pot. During the process, remove the skins with the tip of a paring knife or fork & discard. Remove the mixture from the heat. Transfer to a small bowl. Chill 2 hours or cover & chill up to 5 days.

Smaller galettes will bake faster than the larger ones so use the center rack instead of the bottom so as the pastry closest to the pan doesn’t brown too much.
