Tuile Cups

Tuile cookies & cups have always been a bakeshop staple. Roll the hot, thin cookies for a cigarette shape ideal to accompany custard based desserts or make them the star attraction entirely by pressing them over a glass. Once cool, fill them with pastry cream & fruit, mousse or lemon curd. Handcrafting custom cups takes time, patience & working directly with hot cookies. The key points to know are that you should work with just a few cookies at a time. Spread the batter as thinly & as evenly as possible. A silicone baking mat is the best piece of equipment to use when preparing this French classic but I’ve have considerable success when baking them on parchment paper & non-stick aluminum foil too. If the cookies become firm before shaping them, often times the discs may be returned to the oven briefly to become pliable again. makes 1 3/4 cups

Basic tuile cookie circles may be formed over a rolling pin to cool that resemble the rooftop tiles of French country homes.

1/2 cup softened butter
1 cup powdered sugar, lightly portioned
A pinch of kosher salt
4 egg whites
1/4 tsp vanilla bean paste
1 cup cake flour, lightly portioned

Cream the butter, the powdered sugar & the salt in an electric stand mixer on Medium speed until smooth, about 3 minutes. Stop the mixer & scrape down the bowl sides. Begin adding the egg whites. The mixture will not be smooth. Do not over mix. Stir in the vanilla bean paste then fold in the flour using a rubber spatula. The batter will have lumps. Attach the work bowl back to the mixer & blend on Medium speed 10 to 15 seconds, just until that batter is smooth & ribbons form as it returns back into the bowl from the flat beater once lifted. Transfer to a bowl & cover. Chill 20 minutes. 

Preheat the oven to 350 degrees. Invert a half sheet pan & place it on the middle rack. Meanwhile, portion about 1 tablespoon of batter into a 5 1/4-inch circle on a silicone baking mat, parchment paper or non-stick release foil, spreading as evenly & thinly as possible using a small palate knife. Repeat 3 times. Chill 5 minutes then place the mat onto the inverted pan in the oven. Bake 7 to 8 minutes or until golden brown over most of the surface. Remove the pan from the oven. The cookies will need additional bake time as they are being formed so do not allow them to get too dark during the first bake. Place 1 of the discs over an inverted shot glass. Quickly top with a second shot glass, pressing gently over the pliable cookie to create a cup. Let stand 10 minutes or until cool.

Place a piece of parchment paper over the inverted sheet pan in the oven. Working with 1 additional disc at a time, place it on the parchment paper & allow it to become pliable again, about 2 minutes. Remove it from the oven & repeat the process with the remaining discs & tuile batter. Makes about 16 dessert cups.

The silicone baking mat will need to cool completely between batches so place it over a half sheet pan in the refrigerator briefly to cool quickly. It does require a several tries to master the technique so expect partially shaped circles & some crumbs during the process however save them.
