 Tomato pie has long been a classic recipe to prepare during the summer months in the South. Look for varieties such as Lemon Boy hybrid & Big Beef or heirloom tomatoes such as Red Beefsteak, Brandywines & Cherokee Purples when choosing selections from farm stands. They will not only offer delicious flavor but rich color as well. Classic Tomato-Basil Tart may be prepared with a recipe of Buttermilk Pâte Brisée. makes 8 servings

1 1/2 lbs assorted sill-ripened tomatoes, cut 1/4-inch thick
1/2 tsp kosher salt
Buttermilk Pâte Brisée
1 cup shredded Jarlsburg & Gouda cheeses, divided
1/3 cup mayonnaise
1 Tbsp Dijon mustard
1/4 cup chopped fresh basil
1 garlic clove, pressed
1/4 tsp freshly ground pepper
1/4 tsp lemon zest
Freshly ground pepper & basil leaves

Place the tomato slices on paper towels in a single layer. Sprinkle with the salt & let stand for 30 minutes. Meanwhile, prepare the Buttermilk Pâte Brisée as directed. Place a 10.25-inch tart pan with a removable bottom on a half sheet pan. Lightly grease the tart pan. Set aside. Roll the pastry dough to a 1/4-inch thickness into a 12-inch circle between plastic wrap. Remove one piece of the wrap & invert the pastry over the prepared pan. Remove the second piece of wrap & discard. Fit the pastry into the pan, pressing into the fluted edges. Remove any excess dough. Pierce the crust bottom & sides all over with a fork. Freeze 20 minutes.

Preheat the oven to 425 degrees. Place a piece of parchment paper into the crust. Top with pie weights or dried beans. Bake 20 minutes. Meanwhile, stir together 2/3 cups cheese, the mayonnaise, the mustard, the basil, the garlic, the lemon zest & 1/4 tsp pepper a small bowl. Remove the crust from the oven, lift the pie weights off of it & return it to the oven. Bake an additional 10 minutes. Sprinkle the warm crust with the remaining 1/3 cup of cheese. 

Reduce the oven temperature to 350 degrees. Spread the cheese & herb mixture over the layer of cheese in the pre-baked crust. Arrange the tomatoes over the filling & blot with additional paper towels to remove as much liquid as possible. Bake 30 to 35 minutes on the lower oven rack. Cool 20 minutes. Slice into wedges.

makes 1 {10-inch} pie crust

1 3/4 cups all purpose flour
2 tsp sugar
1 tsp kosher salt
3/4 cup cold butter, cut into pieces
4 Tbsp ice cold whole buttermilk

Whisk together the flour, the sugar & the salt in a large bowl. Cut the butter into the mixture using a pastry blender or your fingers until crumbly in texture making certain to leave some of the fat in large bits. Drizzle the buttermilk over the mixture. Fold it together with a rubber spatula then shape it into a compact mixture between your hands. Remove the dough from the bowl, form into a disc & cover in plastic wrap. Use immediately.
