Buttermilk Pound Cake

Pound cakes are the pearls of the cakes as they are appropriate anytime for gatherings large or small. My mother always told me to be certain one is always under the glass dome as you never know when unexpected guests may drop by. One of the easiest & most coveted in the Southern cake family, pound cake is versatile as it can be used in a variety of applications from layered desserts to strawberry shortcake. They can be elevated during the holidays when topped with a lovely garnish of Sugared Fresh Cranberries or by drizzling slices with Caramel Sauce or Bourbon Praline Sauce. Add a scoop of vanilla bean ice cream & guests will certainly feel you have outdone yourself.

RKG Original Small MonogramClassic Buttermilk Pound Cake
makes 16 servings

1 1/2 cups butter, softened
3 cups sugar
5 eggs, room temperature
2 Tbsp fresh lemon juice
2 tsp vanilla extract
3 cups all purpose flour
1 cup whole buttermilk

Preheat the oven to 325 degrees. Grease & flour 1 {10-inch} tube pan or 2 {9-x 5-inch} loaf pans. Cream the butter & the sugar with an electric stand mixer on Medium speed until light & fluffy, about 5 minutes. Add the eggs, one at a time & mix until well blended. Add the lemon juice & the vanilla. Blend in the flour alternately with the buttermilk, mixing on Low speed. Spoon the batter evenly into the prepared pan. Bake 1 hour & 15 minutes to 1 hour & 25 minutes or until a long wooden pick tests clean when inserted into the center of the cake. Cool the cake in the pan for 10 minutes. Run a small palate knife between the cake & the pan edge. Remove the cake from the pan. Cool completely on a wire rack.

The Tube Pan Preparation 

Tube pan cakes are some of the most simple desserts to prepare & do not need much in order have the cake batter oven ready. The key factor is being certain the pan is generously greased & dusted with flour so that the cake releases without flaw, enough where you can see the shortening streaks around the inside of the pans. Pay particular attention when applying shortening to the center tube portion as this seems to be a trouble spot when removing the cake from the pan. The Cake Batter Procedure

Add the vanilla & the lemon juice. Blend the mixture once again on Low speed to combine. Be certain to stop the mixer occasionally during the blending process & scrape down the bowl sides for the best results.

Buttermilk provides delicious flavor & moist texture to the pound cake. Measure the flour & the salt. Place the ingredients in a bowl & be certain to whisk them together so only minimal blending will be needed. The last little bit that goes into the mixer should be flour & it can be folded in by hand, if desired, to avoid over mixing the batter. Use a rubber spatula to get down onto the bottom of the bowl to fold everything together well. The pound cake batter will be thick & smooth.

The Portioning

The batter is very thick. Dollop spoonfuls of batter evenly into the prepared tube pan. There is no need to spread it out.

Drop the pan on the counter several times once filled to settle the air bubbles, about an inch from the surface. This ensures the cake will evenly rise during baking.

The Baking & The Cooling 

Pound cakes do take a bit of time to bake in the oven. Generally, a lower oven temperature is needed in order to be certain the exterior of the cake does not get too dark. If using a tube pan has a dark exterior, wrap the outside of it with foil. Position an oven rack in the center of the oven & always preheat it while preparing the cake batter so that it is the proper temperature when the filled tube pan is added. Place the pan on the rack & start the timer. When the cake is ready to be removed from the oven, it  will pull away from the pan edges & a toothpick inserted into the center will test clean. Do not over bake the cake.

Cool the cake in the pan on a wire rack 10 minutes then invert it to remove it from the tube pan. Flip the cake back over over & allow it to cool completely on a wire rack, about 1 hour.

The Buttermilk Pound Cake

The pound cake can be stored at room temperature until ready to slice. Expect a dense, moist cake with loads of twang with a faint hint of lemon to balance the flavor. As a pound cake seasons or stands, the flavors mellow. The texture, velvety on the tongue.

Sad streaks are possible when preparing pound cakes. They are soft-set portions of cake much like a vanilla truffle in texture & taste that is a common occurrence when pound cakes are slightly under baked. The cake will slice & still serve beautifully however if you want to prevent them in the future, just leave the cake in the oven about 5 minutes longer next time.

    Is it just as important to mix buttermilk in at room temp or does it mix just as well cold?
