Baking the galettes on a heavy duty half sheet pan with a lip in the lower portion of the oven will ensure a perfect, crisp crust on the bottom. If using a thinner pan, bake on the center rack. Do not use a cookie sheet. If the fruit is ultra juicy, it will release during the baking process.

Lemon-Cornmeal Streusel
Buttermilk Pâte Sucrée
4 firm, ripe fresh nectarines {about 1 pound}, pitted & thinly sliced
Premium vanilla bean ice cream

Prepare the Lemon-Cornmeal Streusel as directed. Chill. Prepare the Buttermilk Pâte Sucrée as directed. Divide the dough into 4 equal portions. Roll each piece of dough on a lightly floured surface into an 8-inch circle to a 1/4-inch thickness. Arrange 1/4 of the nectarines in an even layer in the center of the prepared pastry dough leaving a 2-inch border. Sprinkle 1/4 of the Lemon-Cornmeal Streusel over the fruit. Fold the excess dough over the fruit mixture forming a rustic, freeform tart. Transfer to a parchment paper-lined half sheet pan. Repeat with the remaining 3 portions of dough. Freeze 15 minutes or chill 1 hour.

Preheat the oven to 425 degrees. Bake the galettes in the lower third portion of the oven 35 to 40 minutes or until the filling is bubbly & the crust is golden. Remove from the oven. Serve warm with ice cream, if desired.

2 cups all purpose flour
1/2 cup sugar
1 tsp kosher salt
3/4 cup cold butter, cut into pieces
4 Tbsp ice cold whole buttermilk
1 egg yolk

Whisk together the flour, the sugar & the salt in a large bowl. Cut the butter into the mixture using a pastry blender or your fingers until crumbly in texture making certain to leave some of the fat in large bits. Drizzle the buttermilk & the egg yolk over the mixture. Fold it together with a rubber spatula then shape it into a compact mixture between your hands. Remove the dough from the bowl, form into a disc & cover in plastic wrap. Chill 20 minutes. Use as directed.

Combine the sugar, the flour, the cornmeal & the lemon zest in a small bowl. Cut in the butter using a pastry blender until sandy in texture. The mixture will seem dry. Form small clumps of the streusel in your hands & release back into the bowl. Chill 10 minutes. Use as directed.
