makes 20 muffins

Lemon Streusel
3 cups all purpose flour
1 cup sugar
2 tsp baking powder
1/4 tsp baking soda
1/4 tsp kosher salt
1 1/4 cups whole buttermilk
1/2 cup melted butter, cooled
2 eggs
1/2 tsp lemon zest
2 Tbsp fresh lemon juice
1 1/2 cups fresh blueberries

Preheat the oven to 400 degrees. Prepare the Lemon Streusel as directed. Chill. Meanwhile, whisk together the flour, the sugar, the baking powder, the baking soda & the salt in a large bowl. In a separate bowl, combine the buttermilk, the butter, the eggs, the lemon zest & the lemon juice until smooth. Pour the mixture into the center of the dry ingredients. Fold the buttermilk mixture into the flour mixture. Blend just until the batter forms. Fold in the blueberries. Portion the batter evenly between 20 lightly greased standard-sized muffins cups filling approximately half full. Sprinkle the Lemon Streusel evenly over the tops pressing lightly into the batter. Place the pans on the middle oven rack. Turn the temperature down to 350 degrees & bake 15 to 20 minutes or until a wooden pick tests clean. Let stand 5 minutes. Gently loosen the muffins from the pans using a paring knife. Transfer to a wire rack. Cool completely.

1 cup all purpose flour
1/3 cup sugar
2 tsp lemon zest
1/4 cup melted butter, cooled

Combine the flour, the sugar & the lemon zest in a small bowl. Add the melted butter & stir the mixture using a fork until blended & crumbly. Use your hands to form small clumps of the mixture & release them back into the bowl. Use as directed.
