The Technique

Kolaches

Kolaches, a traditional Czechoslovakian pastry, began making their first appearance in the United States in Texas. The most classic recipes are topped with apricot & poppy seed fillings but the yeast risen dough is so versatile, many fruit combinations may be used from apple to blueberry & so much more. Lemon-Cream Cheese Buttermilk Kolaches are prepared by rolling the dough & cutting circles from it, however it may just as easily be scaled & shaped like a basic dinner roll. This version produces a smaller pastry but they may be cut larger, if desired. Learn how to make a classic breakfast pastry in your very own kitchen.

makes 2 dozen

2 Tbsp warm water
1 tsp active dry yeast
1/4 cup sugar
2 cups bread flour
3/4 tsp kosher salt
1/4 tsp ground nutmeg
1/4 cup softened butter
1/2 cup room temperature buttermilk
2 eggs, divided
Fresh Lemon-Cream Cheese
Lemon Cornmeal Streusel

Stir together the water, the yeast & the 1 teaspoon of the sugar. Let stand 5 minutes or until foamy. Whisk together the remaining sugar, flour, the salt & the nutmeg in the bowl of a stand mixer. Add the butter, the buttermilk, 1 egg & the yeast mixture. Mix on Low speed 1 minute with a dough hook. The dough will be very sticky. Scrape the side of the bowl with a rubber spatula. Increase the speed to Medium & mix 4 minutes. The dough will not come together in a ball around the hook during the blending process. Sprinkle flour around the bowl sides & transfer the dough to a well floured surface. It will be quite sticky. Press the dough flat & shape it into a ball. Place in a lightly greased bowl. Spray the dough surface with cooking spray & cover the bowl with plastic wrap. Let rise in a draft-free spot for 1 1/2 hours or until doubled in bulk. Press the dough down with your fingers & transfer it to a well floured surface. Roll the dough to a 1/4-inch thickness & cut 2 1/2-inch circles. Place them on parchment paper-lined half sheet pans. Cover loosely with plastic wrap. Repeat until all of the dough has been cut. Allow the dough to rest, as necessary, if it springs back excessively when re rolling the scraps. Cover it with plastic wrap & let stand 5 to 10 minutes. Let the cut dough on the pans rise in a draft free spot for about 1 hour or until an increase by a half their original size has been achieved.

Preheat the oven to 375 degrees. Make an indentation in the center of each piece of dough using your thumb being certain to press all the way to the pan bottom & leaving a 1/2-inch rim around the circumference of the circles. Whisk together the remaining egg & a little cold water then brush it over the dough surface. Pipe 2 teaspoons of the Fresh Lemon-Cream Cheese into each indentation. Top with the Lemon Cornmeal Streusel. Bake 15 to 18 minutes or until golden brown around the pastry edges. Cool 30 minutes.

1 {8-oz} package cream cheese, softened 
1/2 cup sugar
2 tsp all purpose flour
1/2 tsp lemon zest
1 Tbsp fresh lemon juice

Beat all of the ingredients in a medium bowl using an electric stand or hand mixer until whipped & blended. Use as directed.

3 Tbsp all purpose flour
2 Tbsp sugar
1 Tbsp plain yellow cornmeal
1/2 tsp lemon zest
2 Tbsp cold butter, cut into pieces

Combine the flour, the sugar, the cornmeal & the lemon zest in a small bowl. Cut in the butter using a pastry blender until sandy & crumbly in texture. Use as directed.

While the dough is rising, prepare the filling & the topping so they are ready to be used once the indentations are pressed. Brushing the egg mixture over the surface before filling them, makes it so much easier to get that beautiful golden brown color during baking as opposed to completing the task after they have been topped.

The Mixing

Scrape the side of the bowl with a rubber spatula. Increase the speed to Medium & mix 4 minutes. The dough will not come together in a ball around the hook during the blending process.
