1/2 cup 60% bittersweet chocolate morsels
6 Tbsp heavy cream

Microwave the chocolate with the cream in a small glass bowl on High power 45 seconds. Whisk until smooth. Use as directed in specific recipe applications.

Prepare the glaze recipe as directed then pour it over the surface of the items. Use an offset spatula to quickly spread the glaze to an even layer over the surface allowing some to drip over the sides. Once it looks consistent, lift the wire rack & tap it several times on the counter top to pop any air bubbles for the smoothest sheen. Allow the items to chill in order to set the glaze, then follow individual instructions according to specific recipes for plating & presentation.
