9 Hard-Cooked Eggs
1/3 cup mayonnaise
1 Tbsp hot sauce
1 scallion, sliced
3 Tbsp blue cheese crumbles
1/4 tsp kosher salt
freshly ground pepper
4 cooked bacon slices, cut into large pieces

Cut the eggs in half & remove the egg yolk.
Place the yolk in a medium bowl & mash.

Stir in the mayonnaise & the hot sauce.
Whip w/ a fork until light & fluffy.

Stir in the scallions, the blue cheese, the salt & the pepper to taste.

Fill a piping bag w/ the yolk mixture.
Pipe into the egg white shells.

Top w/ bacon.
Garnish w/ additional scallions.
